Sweet pumpkin dumplings

Make good use of the leftover pumpkins from the Halloween season... or use Japanese pumpkins for best results at other times.

Ingredient and Portion

pumpkin 80g
glutinous rice flour 50g
water 1/4 cup
red bean paste 3tbsp
Seasoning

Method

Remove peel of pumpkin, slice thinly and place in bowl, covered with plastic wrap. Microwave on high heat for 2-3mins untill soft.
Use back of fork and mash pumkin. Add in glutinous flour and stir until well combined.
Add water a little at a time forming a soft and smooth dough.
Divide into several equal portions.
Press flat and spoon in some red bean paste.
Wrap well and and shape into balls.
Bring some water to the boil, place dumplings in and cook until dumplings float.Drain water and run in cold water.
Place onto plate and serve with syrup.
