This dish is basically a balanced meal on its own!
The green vegetables contrasts with the red, chili sauce chicken pieces. Great for a simple,one dish meal.

Ingredient and Portion

450g chicken
3/4 tbsp red chili powder
100g french beans
3-5 shallots
1/2 tbsp chopped garlic
Seasoning
Marinade:

1 tsp ginger juice
1 tsp wine
1/4 tsp salt
1 tsp cornflour
a pinch of pepper


Seasoning:

3/4 cup superior stock/water
1 1/2 tbsp light soya sauce
1 1/2 tsp sugar
1/4 tsp salt
a dash of sesame oil
Method

Remove internal organs from chicken, rinse thoroughly and wipe it dry. Chop chicken into chunks and stir in marinade for 10 minutes. Fry briefly and remove for later use.
Trim and rinse french beans, drain and chop them into lengths.
Cut shallots into slices for later use.
Heat 2 tbsp oil to saute shallots, garlic and chili power, pour in seasonings and bring ingredients to boil. Put in chicken chunks, lower heat and stew ingredients till sauce thickens. Add french beans and cook till tender. Dish up and serve hot.
