Rinse ham with warm water. Place sliced ham on a plate and break rock sugar into small pieces over ham. Add in wine and steam until tender.
Steam thicker pieces for a little longer.
Pour out the sauce, and arrange ham slices onto plate.
Wash dried figs,steam with 1-2tbsp water and steam until very soft. Place onto plate as garnish.
Heat the sauce from steaming the ham and add in sweetened chrysanthemum, stir well. Use a little cornstarch mixed with 1tsp water and pour into the ham sauce, stirring constantly, till sauce thickens. Pour over ham slices and serve.
