Fried Glutinous rice with Chinese sausages

It has always been a tradition to savour preserved meat and sausages in winter. One of the most common dishes using such ingredients is this fried glutinous rice. Bear in mind that this dish is actually quite filling and hard to digest, so make sure not to go overboard!
Ingredient and Portion
glutinous rice 320g
preserved pork meat
chinese sausages 1pc
dried shrimps 20g
dried mushrooms 8pcs
dried scallops 3pcs
chinese ham 60g
some green onions to garnish
Seasoning
sugar 1tsp
oyster sauce 2tbsp
dark soya sauce 2tbsp
dash of pepper
some sesame oil
Method
Soak glutinous rice in water for at least 10 hours. Cook (steam) for 30-40 mins until done.
Soak dried mushrooms, cut into small cubes.
Soak dried scallops and dried shrimps. Cut into smaller pieces.
Rinse ham, preserved meat and sausages in water, then cut into small cubes like the size of the mushrooms.
Heat some oil, fry all ingredients(except rice) and add seasonings.
Pour all the ingredients and sauce over cooked glutinous rice and mix until well combined.
Garnish with green onions.
Tips
It is best to soak glutinous rice overnight.
For a richer taste, omit soya sauce, and cook
1 bottle of light soya sauce with 1 bottle of dark soya sauce along with 650g of slab sugar.
Save remaining sauce for steaming fish, or use in other recipes.
