Braised eggplants with minced pork and spicy bean sauce

The spiciness and aroma of the bean sauce is absorbed by the eggplant and is great eaten with noodles or even plain rice. For a creative twist, try this dish as a topping for spaghetti!
Ingredient and Portion
eggplants 2pcs
minced pork 200g
red chili 1 pc
minced garlic 2tsp
minced shallots 1tsp
ginger few slices
Seasoning
Marinade for pork:
sugar,salt,cornstarch,sesame oil 1/2tsp of each
pinch of pepper

Seasoning:
spicy bean sauce 1 1/2tbsp
oyster sauce 1tsp
sugar,wine 1tsp each
Method
Mince pork and marinade.
Cut eggplants into lengths of about 8cm long. Fry eggplants in hot oil and drain well.
Heat some extra oil, fry minced ginger, garlic , shallots and chili.
Add in minced pork and stir fry, add in wine, eggplants and seasonings and fry until well combined and serve.
