蛋撻平時在外吃得多,而家o係屋企都可以試下整。 (九個份量)
Ingredient and Portion
皮:
低筋粉 110克
牛油 70克
淡奶 14克
砂糖 20克
蛋黃 半隻
鹽 少許

餡:
雞蛋 2隻
砂糖 50克
水 150克
淡奶 40克
吉士粉 6克
Method
1. 先將粉與牛油慢慢融入,加入砂糖和淡奶等搓成糰。將糰平均分成九份。
2. 將圓球搓圓壓扁套入模內,以拇指將撻皮壓入,直至完全貼住撻模,撻底皮不可太厚。
3. 蛋漿餡料全部拂勻,過篩令蛋漿更滑,注入蛋撻模內至8成滿,放進預熱焗爐,以220 度高溫放低層焗10-15分鐘至撻皮邊金黃。
4. 然後轉200 度放中層焗8-10分鐘至蛋漿凝固摃起,內外熟透即成。
Tips
如蛋漿外圍熟但中心未凝固,可將爐溫較至0度,用爐內餘溫多焗五分鐘。
