小朋友對小丸子一定唔陌生,對付唔肯乖乖食飯的寶貝,可以豆腐丸子作餌,用有益健康的豆腐加上枚肉製成的丸子,一定比小丸子更受歡迎。
Ingredient and Portion
(一)豆腐二塊
(二)枚肉四兩
(三)青蔥切粒一湯羹
(四)薑米1/2 湯羹
(五)生粉1/2 杯
(六)上湯三杯
(七)時菜
Seasoning
(一)鹽1/3 茶匙
(二)糖少許
(三)麻油二滴
(四)生粉一茶匙
Method
(一)將豆腐放置雪櫃內三、四小時,將豆腐之水份雪乾為合。

(二)枚肉剁爛,剁時洒少許水,然後加入調味料大力攪勻,最後將豆腐加入大力再攪,務使豆腐全部攪爛為合,然後加入蔥薑攪勻。

(三)將半杯生粉倒於碟上,將肉茸豆腐做成蛋黃大小的丸子,然後滾上薄薄一層生粉。

(四)先煮一鍋滾水,將丸子投入滾水內,丸子熟後會浮面,即可撈出。

(五)將上湯煮滾,放入時菜,加鹽使湯夠鹹味,然後再將丸子放入即可檯。
