(一)黃魚肉六兩
(二)雞蛋三隻
(三)熟油六湯匙
Seasoning
調味汁:
(一)雞蛋三隻
(二)上湯1/2 杯
(三)蔥花一湯匙
(四)薑米一茶匙
(五)紹酒二茶匙
(六)鹽1/6 茶匙
(七)生粉二茶匙
蒸魚用料:
(一)鹽1/4 茶匙
(二)紹酒1/2 湯匙
(三)熟油一湯匙
Method
(一)先將黃花魚加調味搽勻,蒸五分鐘,將魚肉拆出留用。
(二)將調味汁攪勻備用。
(三)將六湯匙熟油燒熱,將黃魚肉加入兜一下,即將調味汁加入,開大火輕輕炒勻,即可上檯,可用芫茜點綴。
