香口的花椒雞,夠睇面,大方得睇又易受落,最適宜宴客用,無論老少都喜愛,要快學識煮比親朋戚友食。

Ingredient and Portion
(一)光雞一隻約二斤
(二)麻油一湯羹
(三)花椒1 1/2 茶匙
(四)嫩薑切幼粒二茶匙
(五)蔥白四條切段一吋長
(六)鹽水一煲(鹹味與海水味同)
Seasoning
(一)老抽一湯羹
(二)浙醋一湯羹
(三)鹽3/4 茶匙
(四)糖二茶匙
Method
(一)光雞洗淨後放入煮滾之鹽水內,即收慢火,將雞浸六分鐘,雞取出後抹乾水分,將雞切半,斬成長塊,每塊闊約一吋。
(二)準備一隻深碗搽上少許豬油將雞塊排入雞皮貼碗底,將斬成零碎不整之雞塊放在上面。
(三)將一湯羹麻油燒熱,倒入花椒子炸香,然後連油及花椒倒進雞內,另外將調味混合淋於雞內再加薑蔥。
(四)將雞開大火蒸廿五至三十分鐘,然後將雞汁倒出,雞肉反扣在碟上原汁淋上可上檯。
