Ingredient and Portion
材料﹝15cm餅模﹞:
餅底:
消化餅碎100g
無鹽牛油溶液50g
忌廉芝士250g (室溫攤軟)
砂糖80g
檸檬汁2 tsp
檸檬皮1 tsp
酸忌廉100g
練奶3 tbsp
魚膠粉10g
白酒50ml
忌廉200ml
Method
1. 先混和餅碎及無鹽牛油溶液,壓實入餅模並雪過夜;
2. 將魚膠粉溶在坐暖水的白酒內;
3. 用打蛋器將忌廉芝士略為打發,加入砂糖,不停攪動至砂糖完全溶入忌廉芝士團中;
4. 加入將檸檬汁及檸檬皮,不停攪動至混和;
5. 加入酸忌廉,繼續攪拌至兩者混合;
6. 將魚膠溶液快手拌入芝士糊中;
7. 加入約打發至5成的忌廉,拌勻;
8. 混和所有材料,注入餅模,用膠刮掃平表面,放入雪櫃雪至少3小時便可享用。
