很剌激的冬蔭公湯,飲得汗流浹背仍要添多些,喜歡它濃郁的味道及材料
Ingredient and Portion
(四人份量)
香茅3至4支(切段)
檸檬葉4至5片
泰式南薑一舊(拍一拍)
紅辣椒3隻(怕辣就去籽)
酸果(Tamarind/ 阿參果)
水約8碗

蝦頭, 蝦殼適量
鹽, 冰糖各少許
大蝦, 魚肉適量
Method
1. 將水滾後把酸果以外的材料放入, 以大火滾一會。
2. 蝦頭、蝦殼用煲魚湯袋裝好加入, 繼續煮滾.
3. 這時可用少量開水浸酸果,再將它細細樁一下,再加入湯內。
4. 水再次大滾後轉中火,加粗鹽同少許冰糖調味, 約煲1.5至2小時.
5. 最後放入大蝦、魚肉等海鮮即可!
Tips
1. 想方便可以去泰國香料店買現成的冬蔭公材料包.
2. 想湯味鮮一點亦可加少少油煎過的細魚如泥鯭 跟蝦殼同煮.
