茄膏 少許
麵粉 70g
無鹽牛油 80g
白酒 少許
雞湯 500ml
水 500ml
白蘭地 少許
忌廉 適量
蕃茜碎 少許
Method
1.洋蔥, 甘荀, 西芹切粒.
2.蝦殼白鑊炒香/ 焗至乾身.
3.以牛油炒香雜菜,落蝦殼兜勻.
4.加茄膏拌勻,落麵粉,白酒, 雞湯, 水煲至大滾.
5.隔渣. 轉細火, 加白蘭地, 鹽&胡椒, 忌廉.
6.上碟時吱少許忌廉圈, 灑上蕃茜碎便可.
Tips
1. 蝦殼洗淨後剪去蝦鬚, 和腳, 方便隔渣.
