鬆脆的小食適合於節日、派對聚會,人人也喜歡的小食。

有皮杏仁250g
糖100g
水40ml
無鹽牛油10g
黑巧克力250g
可可粉適量
Method
1. 糖及水放鍋煮滾(約118C),加入杏仁。
2. 熄火,將糖漿和杏仁拌勻。砂糖會慢慢結晶變白包著整粒杏仁。
3. 開中火繼續炒至糖色變金黃。
4. 熄火,落牛油快手拌勻,倒於不沾布上。
5. 快手將黏在一起的杏仁粒用叉分開。
6. 隔熱水坐溶巧克力,放入已放涼的杏仁,塗上外層。
7. 把杏仁放入可可粉滾動,再篩走多餘可可粉即成。
Tips
A. 煮糖時溫度很高,要特別小心。
B. 煮焦糖杏仁時,聽到杏仁發出聲時要預備熄火。
C. 喜歡多一點巧克力味的話,可以等外層凝固後多沾一層。
D. 可可粉要用無糖的。
