入口容易的菜式一向受人歡迎,這味酥炸荔芋球最適合剛學煮食的人士,學習油炸食品的技巧。
Ingredient and Portion
(一)荔芋一斤
(二)澄麵六湯羹,沖入滾水約1/3 杯搓成粉糰。
(三)乾草菇六件浸透剁碎。
(四)香菜心剁碎1/2 湯羹
(五)生粉一湯羹,開水二湯羹
(六)麵包糠3/4 杯
(七)油鑊
Seasoning
(一)五香粉、糖各1/4 茶匙
(二)鹽1/2 茶匙
(三)油三湯羹
Method
(一)將荔芋十二兩蒸腍壓成茸,加入汀麵糰及調味,再加入乾草菇及香菜心搓勻,做成合桃大小圓扁餅。

(二)將圓餅先蘸生粉水,再黐上麵包糠,即投入油鑊中炸至金黃色排放碟上。

(三)將餘下四兩生荔芋,切成幼絲,炸香圍在碟邊即可上檯。
