迷迭香煙肉蔬菜雞卷配蕃茄醬汁

簡單嘅雞扒加入蔬菜同迷迭香,外皮脆脆的煙肉非常美味。
Ingredient and Portion
雞扒 1塊
甘筍條 2條
西芹條 2條
煙肉 3片
迷迭香 2枝
鹽及胡椒 少許

蕃茄 1罐
洋蔥 半個
蒜 2粒
月桂葉 2片
百里香 少許
鹽 1湯匙
糖 2湯匙
Seasoning
鹽及胡椒 少許
Method
1. 先雞扒起筋去多餘肥膏,用刀背拍鬆雞扒
2. 用鹽及胡椒醃一醃雞肉
3. 甘筍及西芹切到同雞扒差不多長用水灼一灼
4. 將甘筍、西芹及迷迭香放在雞肉中間再卷起
5. 雞面層再包煙肉,再用麻繩包好(如果無繩用牙籤在收口位固定)
6. 預熱焗爐180度焗20分鐘至金黃色即可(如果無焗爐用中火每面煎5分鐘左右)

蕃茄醬汁:
1. 先爆香洋蔥粒及蒜粒
2. 加入蕃茄炒2-3分鐘
3. 加入蕃茄罐內既汁及30ml水
4. 加入香草及月桂葉、鹽及糖
5. 用小火煮到醬汁差不多收乾至2碗水,就用攪拌器打成蓉即可。
