燕窩與芽菜所造成的對比正是這味菜式的特色之一,紅蘿蔔與青豆的加入使外觀更耀目,食慾亦為之大振。
Ingredient and Portion
(一)燕窩二兩
(二)芽菜半斤
(三)杬仁一兩
(四)紅蘿蔔半條批花切片
(五)白菌1/3 杯
(六)青豆1/3 杯
(七)馬蹄五粒
(八)油鑊
Seasoning
味汁:
(一)生抽1 1/2 湯羹
(二)冬菇水四湯羹
(三)水1/2 杯開生粉1 1/2 茶匙
(四)油一湯羹
(五)紹酒一湯羹

燕窩調味:
(一)熟油一湯羹
(二)鹽1/4 茶匙
(三)另熟油少許﹝用以搽燉燕窩用之碗底﹞
Method
(一)先將燕窩浸透(約一小時),泌乾水份加熟油、鹽拌勻。

(二)用深碗一隻碗底搽油,將燕窩放入,隔水燉四十五分鐘,將水泌出,反扣在碟上。

(三)油一湯羹燒熱,加紹酒倒入芽菜一兜,即鏟起,隨即將紅蘿蔔、白菌、青豆,倒入炒,再將味汁倒入滾半分鐘,將芽菜倒回鑊內炒勻即可鏟上燕窩面,將汁淋上。

(四)杬仁炸油撒在上面,用芫茜點綴。
