Ingredient and Portion
一個份量
高筋粉 170g
全麥粉 30g
綠茶粉 3g
糖 30g
依士 4g
鹽 少許
水 130g
蘋果 半個
蛋漿 少許
Method
1.將蘋果切粒,入焗爐以180度焗大約10-15分鐘,焗至蘋果稍為乾身
2.將高筋粉、全麥粉、糖、鹽、依士混合,再加入水搓成麵糰
3.搓至麵糰光滑並可拉出薄膜(取一小部份測試)
4.於室溫發酵一小時,發大至1-2倍
5.拿出麵糰,拍出空氣,滾成大圓形然後鬆馳大約20分鐘
6.用麵棍將麵糰壓平,將麵糰下半部份切成條狀
7.於麵糰上半部份加入蘋果,由上至下捲成條狀
8.進行最後發酵約1小時,掃上蛋漿,入焗爐焗約25-30分鐘,190度
