This cake can be used as a base for other cake recipes. It is also great by itself when eaten with cream and jam.

Ingredient and Portion
2/3 cup Sugar
1 cup Flour
30g melted butter/margarine
4whole eggs, 3 egg whites
Seasoning
Grease baking pans
Place sugar and eggs in heat proof mixing bowl.
Steam (uncovered) –place bowl over hot water in large saucepan (bowl not touching water)
Heat over low heat, stirring occasionally for 5-10 mins till mixture is lukewarm.
Remove bowl from saucepan, stir in vanilla.
Beat egg mixture with electric mixer on hi-speed for 10 mins.
Sift in 1/3 of flour over egg mixture and fold in. Repeat to sift and fold (1/3 flour at a time)
Lastly, gently fold in melted butter. Spread in pans.
Bake in 350F oven for 25-30 mins til done. Cool in pans, transfer to rack,let Cool.
Method
1. 先將蛋糕盤搽上油。
2. 將蛋、蛋白及糖置於耐熱的大碗內。將碗於熱水上蒸﹝不蓋著﹞,轉細火,並輕力攪拌,至蛋液和暖,離火。
3. 輕力混入香油。
4. 用電動攪拌器﹝高速﹞打至起﹝約十分鐘﹞。篩進1/3 麵粉,輕力將麵粉和蛋混合好。重覆至將所有麵粉和蛋混好。
5. 將麵糊倒進蛋糕盤內,放入已熱350F 的焗爐內焗25-30 分鐘。取出待冷,移至涼架上。
Tips
test for doneness by sticking a wooden stick into centre of cake. If stick comes out clean and dry, cake is ready.
