This makes a great dish for happy hours. The giblets are crispy on the outside, yet still moist and tender in the inside. The sweetness of the accompanying walnuts makes an interesting contrast, as well as perfecting the presentation.

Ingredient and Portion
chicken giblets
Honey roasted walnuts 2/3 cups
Seasoning
Marinade for giblets:
light soya sauce 2tsp
salt 1/2tsp
chicken powder 1/4tsp
sugar 1/4tsp
egg white 1/2pc
corntarch 2/3cup combined with 1/4tsp of baking powder
Method
Rinse giblets,wipe dry and marinade.
Pat giblets dry with a kitchen paper, then dip into egg white and cornstarch mixture.
Heat oil in wok, then put in giblets and deep fry until golden. Serve with walnuts.
Tips
By dipping the marinaded giblets in egg then cornstarch and baking powder, teh juice of the giblets are locked in, preventing it from being dried out inside when frying.
