薯仔因為含高澱粉質,所以很多時代替米飯成為主食。想自製美味的薯蓉,一般人為了方便都會用現成薯粉炮製,雖然質感保證軟滑,但味道不及用薯仔製作般天然。
Ingredient and Portion

牛油15克
蒜頭2顆(切粒)
洋蔥1/2個(切粒)
北海道薯仔2個(連皮切粒)
雞湯1/2杯
忌廉20毫升
海鹽適量
鮮磨黑胡椒粒適量
Seasoning
磨菇燒汁
橄欖油1湯匙
牛油10克
洋蔥2/3個(切粒)
磨菇12粒(切厚片)
紅酒200毫升
磨菇或雞上湯1/2杯
海鹽適量
鮮磨黑胡椒粒適量
Method
1. 熱鑊加油及牛油,以中低火把蒜頭及洋蔥同炒兩分鐘。
2. 調較至大火,於另一鑊內加入磨菇燒汁內的油、牛油及洋蔥炒1至2分鐘,再加入磨菇。把磨菇炒至金黃色及變得較乾身時,加入紅酒及上湯。改以慢火煮15分鐘至汁液變得濃稠。
3. 把薯仔加入已炒過的蒜頭及洋蔥內,調較至大火,把薯仔炒至表皮金黃及內裡軟身。再加入雞湯把薯仔煮稔。另一方法可將薯仔改置焗爐內以攝氏180度焗20分鐘。
4. 大碗內把已煮的薯仔與忌廉一同攪勻,再伴以蘑菇燒汁便可享用。
