Assorted Seafood in Portugese Sauce

Tired of simply grilling or poaching seafood? This baked version with portugese sauce may impress your tastebuds!
Ingredient and Portion
large prawns 3-4pcs
mussels 3-4pcs
squid approx.100g
fish fillet approx.100g
shallots,finely chopped 2pcs
grated ginger 1/2tsp
curry powder 2tsp
onion(shredded) half piece
young coconut 1 piece
Seasoning
For seafood:
White wine 1sp
Salt 1/3tsp
Lemon juice 1tsp
Cornstarch,pepper pinch

sauce:
stock and water from coconut 1/2cup
evaporated milk 1/4cup
coconut juice 1/4 cup
salt 1/2tsp
sugar 1/4tsp
pepper pinch
Method
1.cut seafood into desired size and marinade for 10 minutes. Heat oil in wok and shallow fry and reserve for use.
2.heat oil, fry ginger,shallots and onion, then add in curry powder, milk and coconut juice and seasonings and cook till sauce thickens. Put in seafood and stir well.
Tips
Add a dash of evaporated to improve taste as well as appearance of the dish
