表皮圓滑翠綠的青蘋果,果肉總是帶酸甚至澀味,受歡迎程度不及甜美的紅蘋果。那麼不如將青蘋果入饌,加入味道清甜的蘋果酒同煮,味道更易為人接受。

去皮雞腿2塊
特純初榨橄欖油2湯匙
日本洋蔥1個(切粒)
青蘋果1個
有氣蘋果酒150毫升
雞湯75毫升
海鹽適量
鮮磨黑胡椒粒適量
Method
1. 用醋將蘋果表面的蠟洗去,去皮去核後切開8塊。
2. 熱鑊加油,以中火把雞腿兩邊煎4至5分鐘至變成金黃色。
3. 調校至細火,加入洋蔥炒2至3分鐘至熟透。加入青蘋果並以大火煮5分鐘至變成金黃色。
4. 倒入蘋果酒以大火煮2分鐘至水份減少。
5. 倒入雞湯煮至濃稠後,轉至細火,放入雞腿並蓋上鑊蓋,煮5分鐘至九成熟。拿走鑊蓋,繼續烹煮至醬汁濃稠。最後加入海鹽及黑胡椒調味即可。可伴以意粉、飯或薯蓉一同享用。
