After rinsing cjicken under clean water,pat dry and marinade with light sauce,wine, salt and pepper and cornstarch.
Put chestnuts in hot water for 5 minutes.Drain and remove the skin.
heat oil in wok,fry ginger and green onions, add in chicken and stir fry until golden in colour. take out and drain away excess oil.
Heat some oil in clay pot(if available), fry ginger, then add in chicken,chestnuts and seasonings. drizzle wine and add in stock. turn to low heat and let simmer until both chicken pieces and chestnuts are tender.
