想菜式賣相特別一點,可以從食材著手,好像刮空茄子肉就可成為別致的容器,釀入各種美味材料。
Ingredient and Portion
(2人份)
茄子1條
特純初榨橄欖油適量
乾蔥2顆
蒜頭3顆
海鹽適量
新鮮龍蒿2束
車厘茄1罐
山羊芝士50克
Method
1. 茄子洗淨後切半;乾蔥去皮後切半;山羊芝士刨碎。
2. 焗爐預熱至180度。茄子中間部份刮空成為容器,約留下1/2cm厚肉,刮出的刮子肉預留備用。
3. 熱鑊加油把乾蔥及蒜頭兜炒。加入海鹽調味。
4. 加入龍蒿、茄子肉及車茄炒至軟身,取出並放入茄子杯內。
5. 茄子杯先置焗爐內焗15分鐘,取出並灑上山羊芝士後,再置焗爐內焗2至3分鐘或至芝士溶化便可。
