黑豆具駐顏、明目、烏髮、活血、降膽固醇等作用。雞腳含大量膠質,能強健筋骨,補益腳力。雲耳、冬菇可降低膽固醇,能將積聚的脂肪由腸道去掉達到降低膽固醇的作用。雲耳亦可防禦血栓塞及血管性心臟病。
Ingredient and Portion
(4至6人份)
黑豆 1碗
雞腳 12隻
雲耳 1両
冬菇 12至14隻
西施骨 1條(斬件)
薑 3片
Seasoning
鹽 2至3茶匙
Method
1. 黑豆沖水、雲耳洗淨、分開浸水1小時。冬菇洗淨浸水2小時或至腍身。
2. 雞腳、西施骨洗淨後飛水。
3. 大湯煲放12至14碗水。水滾後放入所有材料。水滾後以慢中火煲1.5小時。如用壓力煲、加蓋後以最慢火煲20分鐘,自動放氣及開蓋後翻滚5分鐘。
5. 加鹽調味即成。
Tips
浸黑豆、雲耳及冬菇後的水可放入取代清水,令湯味更濃。
