(一)栗子肉六兩
(二)生根八個
(三)鮮草菇一兩半
(四)磨菇二兩
(五)筍肉一兩
(六)青豆一兩
(七)乾如耳五錢
(八)乾黃耳五錢
(九)乾冬菇一兩半
(十)菜心四兩
(十一)甘筍花八片
Seasoning
調味料:
(一)油二湯羹
(二)酒一湯羹
(三)鹽3/4 茶匙
(四)糖1/2 茶匙
(五)冬菇水四湯羹
(六)生抽1 1/2 茶匙
(七)老抽二茶匙
(八)生粉二茶匙加水四湯羹
獻汁:
(一)油一湯羹
(二)酒1/2 湯羹
(三)生抽一茶匙
(四)老抽二茶匙
(五)糖1/8 茶匙
(六)冬菇水2/3 杯加生粉二茶匙
Method
(一)先將栗子肉煲稔隔去水留後用。
(二)如耳、黃耳、冬菇發透,而冬菇最好用油、糖、生抽及水燉十五分鐘。
(三)生根、鮮菇、磨菇、筍肉、如耳、黃耳等俱出水。
(四)油、酒起鑊將栗子及其他出水之材料倒入炒香,加入其他調味。
(五)冬菇及甘筍花排於深碟底,將炒好之材料倒入三十五分鐘然後反扣倒於碟上。
(六)炒菜心:用油二湯羹、鹽1/8 茶匙、水二湯羹炒香圍於碟邊。
(七)煮獻汁加入青豆淋於冬菇面可上檯。
