這個酸辣腐竹味道醒胃,怕辣人仕可隨意調較辣度,各適其適。
Ingredient and Portion
(一)生腐竹三片
(二)蕃茄一個
(三)青瓜半條
(四)酸羌一兩
(五)紅辣椒兩隻
Seasoning
醃腐竹用:
(一)生抽半湯羹
(二)鹼水1/4 茶匙
(三)清水1/2 杯

調味獻汁:
(一)水一杯
(二)糖二湯羹
(三)生抽二茶匙
(四)白醋1/2 湯羹
(五)茄汁二湯羹
(六)冬菇水四湯羹
(七)鹽1/8 茶匙
(八)生粉大半湯羹,開水二湯羹
(九)油一湯羹
(十)紹酒一湯羹
Method
(一)將醃腐竹材料混合生腐竹浸入味汁中,約廿分鐘,將腐竹撈起,每片腐竹摺成長方形(約二吋乘六吋),然後切成一吋闊,排在碟上。

(二)蕃茄、青瓜、酸羌及紅椒全部切絲,將鑊燒熱加入油一湯羹紹酒隨手將蕃茄等物(青瓜除外)倒入炒片刻,加入水一杯,待滾即將調味、獻汁之糖、生抽、白醋、茄汁、鹽及生粉水倒入,攪勻待滾,即淋於腐竹上,最後將青瓜撒上。
