如要將綠色和蔬菜聯想在一起,我第一時間想到菠菜,因為它的菜葉很綠,鐵質和纖維豐富,榨成菜汁用來做餐包,純天然,無添加,很健康。

Ingredient and Portion
菠菜 半斤
(榨成菜汁150ml,菜渣切成菜蓉備用,約80g。)
高筋麵粉 270g
低筋麵粉 30g
糖 30g
鹽 1/8茶匙
酵母 半茶匙
橄欖油 30g
奶粉 1湯匙
雞蛋 1隻(備用)
黑芝麻 少許(備用)
Method
1.將菠菜切去根部,用水洗乾淨。
2.用新的煲魚湯袋,將幾株菠菜逐少放入,隔湯袋扭榨出菠菜汁,如是者重覆做幾次,直至有足夠菜汁。
3.將菜汁和各種材料混合,搓揉成一麵糰,甩打,搓揉,直至不黏手,及能張開見薄膜狀。
4.將麵糰放烤盤上,蓋上濕水後擰乾的毛巾,放入焗爐內(無開火),讓其發酵1小時。
5.菠菜榨汁後的菜渣,用刀切幼成菜蓉備用。
6.1小時後,將麵糰取出,傾出至工作板上,灑上一些高筋麵粉,拍打出氣泡,加菜蓉繼續搓揉,將麵糰分割成6等份,滾圓,放回烤盤上,重覆步驟4。
7.發酵完成前10分鐘,將麵糰取出,將焗爐調至180度,預熱10分鐘。
8.麵糰掃上蛋液,灑些少黑芝麻裝飾,放焗爐焗18 -20分鐘便可。
Tips
只用菜葉,榨出的菜汁顏色更綠。
