雞蛋4隻
鯇魚片 100克
皮蛋1隻 切粒
芫茜、葱各一棵
水 5湯匙
鹽、胡椒粉 適量
魚露 適量
Method
1. 雞蛋加鹽和胡椒粉攪匀。
2. 鯇魚片用魚露或鹽和胡椒粉調味。芫茜和葱切碎。
2. 先把魚片用中火輕輕炒下,盛起備用。
3. 用中火再把皮蛋炒下,落魚片、葱花和芫茜,輕輕翻炒幾下,跟着將雞蛋係旁邊倒入,放少許油,煎香至金黄色,再反轉煎埋另一邊。
4. 完成後放少少芫茜拌碟。

因較多細骨,買鲩魚片時可叫店鋪代切薄片。
