這個製法容易的小炒,無論色香味都令人為之一振,發菜令這味菜式加添了一些節日味道。
Ingredient and Portion
(一)冬筍肉一兩
(二)乾冬菇一兩
(三)白菌一兩
(四)鮮菇一兩
(五)竹笙一兩
(六)雲耳五錢
(七)生根五個
(八)荷蘭豆或青豆少許
(九)發菜五錢
(十)銀芽四兩
(十一)蛋麵一斤
(十二)炒麵用油二湯羹
(十三)炒素食用油二湯羹
(十四)酒一湯羹
Seasoning
獻汁:
(一)鹽1/3 茶匙
(二)生抽二茶匙
(三)老抽一茶匙
(四)糖1/4 茶匙
(五)冬菇水四湯羹
(六)生粉二茶匙
(七)油一湯羹
Method
(一)麵用油煎香兩邊

(二)冬筍、白菌、鮮菇、竹笙、雲耳、生根等出水,發菜洗淨剪碎冬菇燉熟,芽菜用兩匙油炒一炒。

(三)用油酒起鑊,炒所有材料,加發菜及獻汁,最後加青豆及芽菜將此炒好之材料倒於炒好之麵上。
