炒碗豆醬味道香濃,經濟實惠又易煮,第二時遲了放工又有一道好菜色揀啦,包保一家人食多幾碗飯。
Ingredient and Portion
(一)枚肉四兩
(二)碗豆一包(去皮)
(三)蔥花一湯羹
(四)薑米1/2 湯羹
(五)豬油二湯羹炒枚肉用
Seasoning
枚肉調味:
(一)鹽1/6 茶匙
(二)生粉二茶匙
(三)熟油1/2 湯羹

調味汁:
(一)磨豉醬二茶匙
(二)紹酒1/2 湯羹
(三)老抽1 1/2 茶匙

埋獻:
(一)上湯一杯
(二)生粉二茶匙
(三)麻油三滴
(四)熟油1/2 湯羹
Method
(一)枚肉切粒如手指頭大小,加入調味拌勻。

(二)將豬油燒熱,即將枚肉粒加入炒熟,即加蔥薑及磨豉醬炒勻,即將碗豆加入灒入紹酒1/2 湯羹及老抽。

(三)將埋獻料之生粉水倒入碗豆枚肉粒內,煮成濃汁,最後加入麻油及熟油,即可上碟。
