枚肉與鯪魚肉再加上馬蹄,混合而做出來的肉糕,口感確有其特色,再加上各樣配料的襯托,使這味菜式更見豐富。
Ingredient and Portion
(一)枚肉1/2 斤
(二)鯪魚肉1/2 杯
(三)馬蹄八顆
(四)冬菇五片
(五)冬筍五、六片
(六)海參二件
(七)青豆1/3 杯
(八)鵪鶉蛋十二隻
Seasoning
枚肉調味:
(一)生粉1 1/2 湯羹
(二)鹽一茶匙
(三)薑蔥水3/4 杯(薑四片,蔥五條加水一杯煮十五分鐘,即成薑蔥水。)

獻汁:
(一)上湯二杯
(二)生抽一湯羹
(三)糖一茶匙
(四)麻油三滴
(五)熟油一湯羹
(六)紹酒一湯羹

煨海參:
(一)薑蔥少許
(二)熟油一湯羹
(三)水1 1/2 杯
Method
(一)先將枚肉剁爛,剁時再洒少許水,鯪魚肉亦剁爛,馬蹄批皮剁爛,三樣加在一起,加入生粉及鹽,順著同一方向攪和,然後一邊攪一邊加入少許薑蔥水,加完3/4 杯為合,攪約廿分鐘,見肉色發白即可。

(二)準備一個平底盆,盆底搽油,將肉倒入撥丕,隔水蒸三十分鐘,待冷待切肉片備用。

(三)將海參煨過留用,鵪鶉蛋要烚熟去殼,冬筍出水,冬菇浸透去蒂楂乾水,青豆出水。

(四)將獻汁煮好,加入冬菇、冬筍、海參、鵪鶉煮約十分鐘,然後再將肉羔片放入一兜,最後加入青豆,即可上碟。
