水晶粉皮卷內的材料,可按口味隨意配搭。

冬菇 6隻
西芹 2條
紅蘿蔔 2両
火腿 1片
五香豆腐乾 4片
白芝麻 1湯匙
水晶粉皮 10張
Seasoning
麻醬 2湯匙
上湯 6湯匙
生抽 1/2湯匙
鹽 1/8茶匙
糖 1/4茶匙
蒜茸 1湯匙
Method
1. 冬菇浸軟,去蒂,洗淨,蒸熟,切絲。
2. 西芹、紅蘿蔔、火腿及豆腐乾切絲,用鹽水出水,盛出待冷。
3. 白芝麻白鑊炒香。
4. 汁料中的麻醬先用上湯及生抽開勻,其後加入調味料拌勻。
5. 粉皮用熱水浸軟,一開為二,包入冬菇、西芹、紅蘿蔔、火腿及豆腐乾成粉皮卷,盛碟中蒸約5分鐘,取出淋上汁料及灑上白芝麻,即可供吃。
