簡單方便快捷的檸檬蛋糕食譜,於平凡的蛋糕加入檸檬,即可大大增加蛋糕的鮮味,並散發清新的檸檬芳香。

檸檬汁 2至3茶匙
檸檬皮蓉 半茶匙
自發粉 85克
吉士粉 9克
雞蛋 3隻
糖 90克
橄欖油 27克
糖霜 半杯
Method
1. 把1個檸檬皮磨成蓉並榨汁,備用。
2. 將自發粉、吉士粉、檸檬茸於大碗內拌勻,備用。
3. 用打蛋器將蛋、糖打至厚至忌廉狀,約3分鐘。
4. 將自發粉混合物分三次加入蛋混合物內,輕手拌勻,再加入橄欖油拌勻。
5. 將材料倒入已塗上油的糕盆內。
6. 放入已預熱至180°C的焗爐焗20至25分鐘,或放入蒸籠內,用大火蒸約15至20分鐘,待涼。
7. 把糖霜、檸檬汁拌勻,倒在蛋糕面上即成。
Tips
可用鮮搾橙汁取代檸檬汁;新鮮搾檸檬汁或橙汁可增加蛋糕鮮味。
