簡單版杏仁酥。

Ingredient and Portion
現成酥皮 1塊
蛋白 1隻
糖霜 100-120克
杏仁片 適量

Method
1) 酥皮解凍備用。
2) 蛋白加糖霜拌勻成為蛋白糖漿。(注要不可以有粒粒)
3) 焗爐預熱至攝氏200度。
4) 攤開酥皮,鋪上蛋白糖漿,再鋪上杏仁片,放入雪櫃雪10-15分鐘。
5) 將酥皮切成一條條,入爐用200度焗10-15分鐘,之後用160度焗5-10分鐘即可。
Tips
1) 此食譜的糖霜份量可按需要減少,但糖霜不可用砂糖取代,因為糖霜含有粟粉,令糖漿黏住酥皮同杏仁。
2) 現成酥皮可於大型超市買到。
3) 糖漿要做得比較甜,因為酥皮同杏仁都無甜味,要靠糖漿帶起味道。
