(一)田雞一斤
(二)薑六片切花
(三)蒜肉二粒切片
(四)青紅椒各一隻切塊
(五)上湯1/2 杯
(六)油鑊
(七)中式生菜(拌碟邊用)
Seasoning
調味料:
(一)豆瓣醬一湯羹
(二)生抽1/2 湯羹加老抽1 1/2 茶匙
(三)麻油1/4 茶匙
(四)鹽1/4 茶匙(如上湯已有鹹味,則免下鹽)
(五)熟油2 1/2 湯羹
醃田雞:
(一)薑汁1/2 湯羹
(二)紹酒1/2 湯羹
(三)鹽1/2 茶匙
埋獻:
(一)生粉1 1/2 茶匙加開水3/4 湯羹
Method
(一)田雞洗淨,斬去腳爪,再將田雞腿斬出,田雞身斬件,抹乾水分,加入醃料,醃廿分鐘。
(二)將油鑊之油煮暖投入田雞泡嫩油約三分鐘,即可撈起用。
(三)將油鑊之油泌出,抵留下二湯羹即將豆瓣醬加入炒勻,即倒入上湯1/2 杯,此時可用隔渣鏟將豆瓣渣撈出棄之。
(四)將蒜片、薑片、青紅椒加入湯內,再加生抽、老抽、麻油、鹽,最後加入田雞以文火炆十分鐘,即用生粉水埋獻,最後加入麻油及熟油1/2 湯羹。
(五)上碟後用生菜絲圍邊。
