想有一味可以招呼親朋戚友的招牌菜式,上素水餃是尚佳的選擇。你甚至可以約埋三五知己一起包水餃,可以說是朋友敘會的另類節目。
Ingredient and Portion
(一)水餃皮四兩
(二)冬筍肉四兩
(三)生根五個
(四)香菜一罐
(五)冬菇四隻
(六)白菌十五個
(七)白菜一斤
(八)菜心半斤
(九)冬菇湯三杯(加鹽一茶匙)
Seasoning
調味料:
(一)鹽、糖各1/4 茶匙
(二)生抽二茶匙
(三)老抽一茶匙
(四)麻油1/4 茶匙
(五)油二湯羹
(六)酒一湯羹

埋獻:
(一)生粉二茶匙、開水二湯羹
Method
(一)冬筍切絲出水,將水份楂乾。

(二)生根用滾水泡過楂乾水份,切成幼粒。

(三)香菜切幼粒,冬菇浸透切幼粒,白菌切幼粒。

(四)白菜取其葉切碎,加鹽一茶匙,醃十分鐘,沖洗楂乾水留用。

(五)菜心在滾水內加一湯羹煮三、四分鐘浸於冷水內留用。

(六)倒油二湯羹在鑊內燒熱,加酒一湯羹,將冬筍、冬菇、白菌,倒入炒勻,將其餘調味加入,最後加入生筋及白菜葉,然後用生粉水埋獻。

(七)用水餃皮,將料包成餃子形,投入滾水內煮熟,再放入冬菇湯內,加菜心即可上檯。
